Simple sandwiches have a way of revealing just how much ingredients matter. This apple and cheddar combination is a case in point. Crisp fruit, sharp cheese and good bread come together to create something that feels fresh, balanced and quietly satisfying, whether made for a quick lunch or an easy, no-fuss supper.

Your gourmet sandwich is served…Nine

Using Mainland™ Extra Tasty Aged Cheddar, aged up to 18 months, brings depth and a savoury character to the sandwich. As cheddar ages, its flavour becomes more rounded and pronounced, which pairs naturally with sweetness and gentle acidity. Here, apple and honey soften the cheese, while Dijon mustard adds contrast and lift.

Finished with sourdough buttered with triple churned Mainland ButterSoft™ and fresh herbs, this is an everyday recipe that shows how thoughtful pairings and well-crafted cheese can turn a simple sandwich into something worth slowing down for.

Serve as is for a fresh sandwich, or grill it for a warm, melty version.

Method

  1. Prepare the apple and onion: Thinly slice the apple and toss with lemon juice to prevent browning. Slice the onion thinly and set aside.
  2. Make the sauce: In a small bowl, stir together the Dijon mustard and honey until smooth.
  3. Build the sandwich: Lay out the bread slices and spread lightly with Mainland ButterSoft. Layer with apple slices, slices of Mainland Extra Tasty Aged Cheddar, and onion. Drizzle over the honey mustard sauce, season with pepper and scatter over a few oregano leaves. Top with the remaining bread.
  4. Serve: Enjoy as is, or grill in a sandwich press or frying pan until the bread is golden and the cheese is just melted.
