The sweet treats in a cup or glass allow for creative interpretation of classic desserts that appeal to the taste and sense. “They bring together creamy bases, frothy tops, and layered finishes to create a dramatic, indulgent experience in every sip. Beyond their sensory appeal, they are versatile, easy to adapt across cultures, customizable to individual tastes, and commercially attractive for cafés and restaurants,” says Chef Pooja Sachdev, Co-Founder and Creative Head, Gourmetly Yours.

Drinkable desserts trend is here to stay and slay. “They are not only eye pleasing for Instagram, but also a tongue pleaser. Their playful textures and bold experiments spark global fusions, nudging consumers to sip on inventive new concoctions,” says Delhi-based Shagun Malhotra, a content creator who shares her recipes on Instagram @ my food project.

From Plate to Pour Variety

Drinkable desserts are versatile. They span classics and modern twists. “Hot chocolate, eggnog, masala milk, and falooda bring comfort. Smoothies, milkshakes, and frappes add layers of fruit, nuts, and cream. Also, tea and coffee treats like affogatos, bubble tea and infused tea offer a distinctive experience. Pastry-inspired drinks turn cheesecake and tiramisu into luxuries in a glass. Alcohol-infused creations such as tiramisu martinis and Bailey’s coladas add spirit. Fusion variants like paan shots, rasmalai shooters, and thandai frappes celebrate local flavour,” adds Chef Pooja.

Chefs are loving the drinkable dessert trend, turning gajar halwa, mawa cake or gulkand into sips with just a click. “Guests get curious, they try it, and the familiar flavours win them over. It’s delectable, nostalgic, and for us behind the bar, pure fun to play with.” Says Sandesh Surve, Bar Executive, Café by The St. Regis Mumbai.

Traditional Indian flavours, such as rose, saffron, thandai, and fennel, are reborn in modern sips that fuse nostalgia with innovation. “A rasmalai smoothie swirls saffron-soaked milk with the classic dessert, while pistachio ganache adds depth. Together, saffron and pistachio create layered indulgence. Heritage flavours elevated into refined drinks resonate with older audiences and excite younger ones,” states Pooja.

Sip the fruit dessert

Fresh fruits turn drinkable desserts into vibrant refreshers. They add colour, texture, and natural sweetness, making every sip light and hydrating. Watermelon cools, ice apple soothes, berries brighten, and banana enriches. “A Mango Cheesecake Smoothie—mango, cream, cheese, yoghurt is summer in a glass. Strawberry Coconut Cream of strawberries, coconut milk, honey, vanilla ice cream is lush and delicate. Coconut Caramel with coconut pulp, caramel, and ice cream feels revitalising. These fruit-driven sips are indulgent yet refreshing, irresistible,” adds Shagun.

Layers On Display

Presentation matters as much as flavour. “Clear glassware spotlights layers and textures, while formats should allow sipping or spooning with ease. Ceramic vessels keep hot drinks warm, shorter glasses suit rich indulgences best enjoyed with a spoon, and taller ones elevate layered compositions into a visual showpiece,” adds Sandesh.

The results are bloating, sluggishness, restless sleep, and rebound cravings,” says Functional Nutritionist Mugdha Pradhan, CEO and Founder of iThrive, a health wellness platform.

Skip the sugar rush, think of sweetness as support. “A thick blend of A2 yoghurt or curd, fruits, nuts or seeds, and dates brings natural balance. The result: steady energy, deeper nourishment, and metabolic stability. Indulgence becomes strength, not a spike. Once the palate resets, natural sweetness is enough; satisfaction doesn’t need five layers of sugar, only the right balance of taste and nutrition,” adds Mughda.

Heavy late-night calories disrupt digestion, sleep, and recovery, so enjoy desserts earlier in the day or eat them as standalone snacks,” concludes Mugdha.

OG Brownie Milkshake

Ingredients

• Brownie slice – 100g

• Milk – 100ml

• Chocolate sauce – 30ml

• Ganache – 60g

• Ice blend

• Garnish

• Whipped cream (as needed)

• Few marshmallows

Method

1. Blend in a mixer brownie, chocolate ganache, chocolate sauce, and cream.

2. Pour into a glass and garnish with whipped cream and marshmallows.

Blueberry Smoothie Float

• 8 blueberries

• Chilled milk

• 1/2 tsp vanilla essence

• 1 Vanilla Ice cream scoop

• Ice

Method

1. Blend all ingredients and pour into a glass with ice

• 1 cup chilled milk

• 2 tbsp sugar or sweetener

• Instant coffee dissolved in 1 tbsp of warm water

• 2- almond biscotti

• Cocoa powder (for garnish)

Method

1. Blend milk and sugar.

Add the dissolved coffee.

2. Pour into a glass with crushed biscotti at the bottom and dust with cocoa powder. Layer with crushed biscotti.
