Ingredients

  • Fish fillets: 4 pieces (300-350 grams total)
  • 1st Marinade:
    • Salt: 1/2 tsp
    • Crushed peppercorns: 1/2 tsp
    • Juice of 1/2 small lemon
  • 2nd Marinade:
    • Red chili flakes: 1 tsp
    • Dark soy sauce: 1 tsp
    • Red chili sauce: 2 tbsp
    • Garlic, finely chopped: 1 tbsp
    • Refined oil: 2 tbsp

Instructions

  1. Prepare the First Marinade:
    • In a bowl, mix salt, crushed peppercorns, and lemon juice.
    • Coat the fish fillets with this marinade and let them sit for about 10 minutes.
  2. Prepare the Second Marinade:
    • In another bowl, combine red chili flakes, dark soy sauce, red chili sauce, chopped garlic, and refined oil.
    • Spread this marinade evenly on both sides of the fish fillets.
    • Allow the fillets to marinate for an additional 30 minutes.
  3. Grill the Fish:
    • Preheat a grill pan over medium heat and brush it lightly with oil.
    • Place the marinated fish fillets on the grill pan and cook for about 2 minutes on one side.
    • Flip the fillets, apply some remaining marinade on top, and grill for another 2 minutes.
    • Reduce the heat to low and baste the fish with oil/marinade while grilling for an additional 2 minutes on each side.
  4. Serve:
    • Once cooked through and slightly charred, remove the fish from the grill.
    • Serve hot with lemon wedges or your choice of sides.
