This year, skip the stressful appetisers and focus on this stunningly simple pairing. These feta and herb stuffed flatbreads are soft, savoury and packed with fresh Mediterranean flavour. They’re an absolute crowd-pleaser and take just 25 minutes from pantry to plate.
But no festive bite is complete without a perfect pour. We’ve found the ultimate match in Croser NV, a beautifully balanced Australian sparkling wine, served with a creative, ice-cold twist. This pairing is perfect to serve guests without breaking a sweat.
Feta and herb stuffed flat bread
Paired with: Croser NV
Serves: 6
Total time: 25 mins
Ingredients
- 1⅓ cup (200g) self-raising flour
- ½ tsp baking powder
- 200g Greek yoghurt
- 2 spring onions, chopped
- ½ cup of your choice of mixed herbs: dill, parsley, oregano, mint, roughly chopped
- 200g feta, crumbled
Method
- Combine the flour, baking powder and yoghurt, then mix with hands until the dough comes together.
- Dust your work surface with flour, gently knead the dough into a smooth ball. Set aside.
- Combine the feta, herbs and spring onions. Mix well.
- Cut dough into 6 equal pieces and roll out each piece.
- Place a tablespoon of the feta filling in the centre, then bring all the corners into the centre and seal.
- Turn the parcel over and gently flatten. Repeat with the remaining dough.
- Rub some olive oil over the breads until all the surfaces are covered.
- Place in a frying pan over medium heat and cook for 5-6 minutes on each side, or until they are puffed and golden brown.
For the Croser NV
- Fill a wine goblet glass with ice.
- Fill glass with Croser NV.
- Garnish with a fresh orange slice speared with a twig of rosemary.
