Simple and Delicious Aloo Matar Recipe: A Comforting Potato and Pea Curry

Ingredients:

  • 4 medium potatoes, peeled and cut into ½ inch cubes
  • 1¼ cups shelled green peas
  • 2 tablespoons oil
  • 1 bay leaf
  • 1 teaspoon cumin seeds
  • 2 medium onions, chopped
  • 1½ teaspoons ginger paste
  • 1½ teaspoons garlic paste
  • ¼ teaspoon turmeric powder
  • 1½ teaspoons coriander powder
  • 1 teaspoon red chili powder
  • 1 cup fresh tomato puree
  • 1 teaspoon garam masala powder
  • Salt to taste
  • 2 tablespoons chopped fresh coriander leaves for garnish

Instructions:

  1. Heat Oil: In a non-stick pan, heat the oil and add the bay leaf and cumin seeds. Once the seeds start to change color, add the chopped onions and sauté until golden brown (about 3-4 minutes).
  2. Add Pastes: Stir in the ginger and garlic paste, cooking for an additional 30 seconds.
  3. Spice It Up: Add turmeric, coriander powder, and red chili powder, sautéing for another 30 seconds to release the spices’ aromas.
  4. Cook Potatoes: Add the cubed potatoes along with 2 cups of water. Cover the pan and cook for about 5 minutes or until the potatoes are half-cooked.
  5. Add Tomato Puree: Pour in the fresh tomato puree, cover again, and cook for another 5-6 minutes until the potatoes are tender.
  6. Finish with Peas: Stir in the green peas, garam masala, and salt. Mix well and cover, cooking for an additional 8-10 minutes.
  7. Garnish and Serve: Once cooked, add chopped coriander leaves for garnish. Serve hot with parathas or rice.
