Here’s a delicious Chicken Korma recipe that combines aromatic spices and creamy textures for a delightful dish. This recipe is simple to follow and perfect for serving with rice or naan.

Ingredients

For the Marinade:

  • 500 grams chicken (bone-in preferred)
  • ½ teaspoon turmeric powder
  • 3 tablespoons plain yogurt (curd)
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon garam masala
  • 1 teaspoon Kashmiri red chili powder
  • Salt to taste

For the Korma:

  • 2 tablespoons oil or ghee
  • 2 green cardamoms
  • 1 bay leaf
  • 1-inch cinnamon stick
  • 4 cloves
  • 1 cup sliced onions (about 2 medium onions), fried until golden brown
  • 10 cashew nuts (or almonds)
  • ¼ cup plain yogurt (optional, for creaminess)
  • Fresh coriander leaves for garnish
  • Water as needed

Instructions

  1. Marinate the Chicken:
    • In a bowl, combine the chicken pieces with turmeric, yogurt, ginger-garlic paste, garam masala, red chili powder, and salt. Mix well and let it marinate for at least 30 minutes.
  2. Prepare the Onion-Cashew Paste:
    • Blend the fried onions and cashew nuts together into a smooth paste. You can add a little water if necessary to help blend.
  3. Cook the Chicken:
    • Heat oil or ghee in a heavy-bottomed pan over medium heat. Add the whole spices (cardamom, bay leaf, cinnamon, and cloves) and sauté for about a minute until fragrant.
    • Add the marinated chicken to the pan and cook on high heat for about 5 minutes until the chicken is browned.
  4. Combine Ingredients:
    • Lower the heat and add the onion-cashew paste along with additional yogurt if using. Stir well to combine all ingredients.
    • Cook for another 5 minutes, stirring continuously.
  5. Simmer:
    • Add about 1 cup of water to achieve your desired consistency. Cover and cook on low heat for about 20 minutes or until the chicken is tender and cooked through.
    • Stir occasionally and adjust water as needed to prevent sticking.
  6. Final Touches:
    • Once cooked, check seasoning and adjust salt if necessary. Garnish with fresh coriander leaves before serving.
  7. Serve:
    • Serve hot with steamed rice, naan, or roti.
