Winter Panjiri Recipe

Panjiri is a cherished Punjabi sweet, especially enjoyed during the winter months for its nourishing qualities. Made from wholesome ingredients like whole wheat flour, ghee, and an assortment of nuts and spices, it offers warmth and energy. Here’s how to prepare this delightful treat.

Ingredients

  • 2 cups whole wheat flour
  • ½ cup + 4 teaspoons ghee (clarified butter)
  • 2 tablespoons white sesame seeds
  • ¼ cup gum resin (gondh)
  • 1½ tablespoons kamar khas (an aromatic seed)
  • ½ cup almonds
  • ½ cup cashew nuts
  • ½ cup lotus seeds (makhana)
  • A large pinch of ginger powder (sonth)
  • ¾ cup powdered sugar

Instructions

  1. Roast the Flour:
    • In a non-stick pan, heat ½ cup of ghee over medium heat.
    • Add the whole wheat flour, stirring frequently for about 15-20 minutes until it turns fragrant and slightly browned.
  2. Prepare the Seeds and Nuts:
    • In another pan, dry roast the white sesame seeds until they are lightly golden. Set aside.
    • In the same pan, heat 2 teaspoons of ghee, add the gum resin, and roast for about 1 minute until it puffs up, then transfer to a plate.
    • Heat 1 teaspoon of ghee, add the kamar khas, and sauté until crisp. Set aside.
    • Roast the almonds in the remaining ghee for about 4-5 minutes, then coarsely grind them using a mortar and pestle.
    • Repeat with the cashew nuts, roasting until golden brown before grinding them coarsely.
    • Finally, roast the lotus seeds until they are crisp.
  3. Combine Ingredients:
    • In a large bowl, mix the roasted whole wheat flour with all prepared ingredients: sesame seeds, almonds, cashew nuts, crushed lotus seeds, kamar khas, and gum resin.
    • Add the ginger powder and powdered sugar to this mixture. Stir well to combine all ingredients thoroughly.
  4. Storage:
    • Allow the mixture to cool completely before storing it in an airtight container. Panjiri can be enjoyed as a nutritious snack or dessert.
