To prepare a delicious Surmai Fish Fry, follow this step-by-step recipe that combines marination and frying techniques for a crispy and flavorful dish.

Ingredients

  • Surmai fish (washed): 250 gm
  • Ginger garlic paste: 1 tbsp
  • Lemon juice: 1 tbsp
  • Rice flour: 1.5 tbsp
  • Fine semolina (rava): 3 tbsp
  • Turmeric powder: 3/4 tsp
  • Red chili powder: 1 tsp
  • Cumin powder: 1/2 tsp
  • Garam masala powder: 1/2 tsp
  • Cooking oil: 3 tbsp (for frying)
  • Salt: 1 tsp (or to taste)

Instructions

Step 1: Marinate the Fish

  1. In a bowl, combine the Surmai fish with lemon juice, turmeric powder, and salt. Mix well to ensure the fish is evenly coated.
  2. Cover and let it marinate for about 10 minutes.

Step 2: Prepare the Masala Paste

  1. In a separate plate, mix together:
    • Turmeric powder
    • Red chili powder
    • Cumin powder
    • Garam masala powder
    • Salt
    • Ginger garlic paste (you may add a teaspoon of water if needed to make it a paste).
  2. This masala paste will be used to coat the fish.

Step 3: Coat the Fish

  1. Take each marinated fish slice and coat it with the prepared masala paste on both sides.
  2. Cover the coated fish and let it sit for another 20 minutes.

Step 4: Prepare for Frying

  1. In a plate, mix rice flour and fine semolina.
  2. Take each masala-coated fish slice and coat it with the rice flour and semolina mixture on both sides.

Step 5: Fry the Fish

  1. Heat oil in a pan over medium heat.
  2. Once hot, reduce the flame to low and carefully place the coated fish slices in the pan.
  3. Fry for about 5-7 minutes on one side until golden brown, then flip and fry for another 5-7 minutes on the other side.
  4. For extra crispiness, flip again and fry for an additional minute.

Step 6: Serve

  1. Remove the fried Surmai fish from the pan and place them on a kitchen towel to absorb excess oil.
  2. Serve hot with green chutney, lemon wedges, and onion slices.
