  • 750-800g whole chicken, cut into pieces (or boneless chicken thighs)
  • 220g carrots, cut into chunks
  • 220g red onions, diced
  • 220g tomatoes, chopped
  • 4 stalks of celery, cut into sections
  • 2 potatoes, cut into chunks
  • 30g butter
  • 2 teaspoons Italian mixed herbs
  • Salt and pepper to taste
  • 2 bay leaves
  • 3 tablespoons tomato sauce
  • 2 tablespoons red wine (optional)
  • 250ml chicken stock
  • 450ml water
  • Fresh parsley (for garnish)

Instructions

  1. Prepare the Chicken:
